Chicken Tacos
–soft, fresh and delicious–
In the chicken tacos you will see some soft tortillas that have a very interesting filling because it is made with chicken, bell pepper, coriander and more ingredients; that make of this combination a delight.
About the Recipe
- This recipe is easy to make you only have to cut some ingredients, then fry them and at the end the tacos are made.
- Start from scratch by preparing your own corn tortillas.
- This recipe can also be prepared with flour tortillas.
- The tacos are prepared with red bell pepper however it can be exchanged for yellow or orange.

Cut some Ingredients- Cut 2 limes into wedges, put them in ramekin and take it to the table.
- Finely chop 1/2 onion and 3 coriander sprigs; then set aside.
- Discard the seeds and the veins of 1 red bell pepper and 1 green bell pepper.
It is very important to remove the seeds and the veins of the bell peppers because they don’t provide a pleasant taste to the tacos. |
- Cut into strips the 2 bell peppers with the ones you worked, then reserve.
- Clean 2 boneless and skinless chicken breasts.
- Dice the chicken breasts that were cleaned, then reserve.
- Heat in a frying pan over medium heat 2 tablespoons of olive oil.
- Put in the frying pan the onion that was minced and fry it for approximately 1 minute, until it looks a bit transparent; stir regularly.
- Incorporate in the frying pan:
- The Chicken dices that were cut.
- The Red Bell Pepper strips that were cut.
- The Green Bell Pepper strips that were cut.
- Mix the frying pan ingredients and fry them for about 5 minutes until the chicken is moderately cooked; stir regularly.
- Add in the frying pan, along with the other ingredients:
- The Coriander that was minced.
- Pepper to taste.
- 1/4 tablespoon of Salt.
- Mix the frying pan ingredients and fry them for about 2 minutes, until the chicken is well cooked; stir regularly. Then set aside.
Make the Tacos
- Heat on a griddle over medium heat 10 maize tortillas for approximately 1 minute per each side, until they are well heated.
- Remove from the griddle the tortillas and put on each tortilla some of the filling that was cooked.
- Roll the chicken tacos that were prepared or fold them as quesadillas.
