About the Recipe
This recipe is easy to make but you have to follow the steps carefully so your mayonnaise will be a success.
To make the mayonnaise eggs are used and it is very important that they are not cold so the ingredients integrate. Take them out from the fridge 15 minutes before starting to prepare the recipe.
Set the blender to medium power and pour 1 cup of olive oil in the form of a thread. Upon completion turn off the blender.
It is vey important to add slowly the olive oil if not the mayonnaise breaks and it becomes a mess.
In case that the mayonnaise breaks (the ingredients don’t integrate) don’t worry there is a solution. Transfer the mayonnaise to a glass and pour 3 tablespoons of hot water in the blender. Set the blender to low power and pour the mayonnaise in the form of a thread.
Add in the blender:
The juice of 1 Lime.
1 tablespoon of White Vinegar.
Pepper to taste.
Blend very well the ingredients.

Tip: This mayonnaise will last from 4 to 5 days in the refrigerator.
Variation: Other salsa that combines in an excellent way with the chipotle pepper is the ketchup.
