or Pot Recado
The recaudos or recados are a mixture of aromatic herbs (fresh or dried), that grind with other condiments are used to enhance the flavor of different dishes . Generally the beauty of these “recaudos" is that they are prepared in advance, until the moment comes of cooking the dish.
– It could be said, that sometimes, they are the beginning in the elaboration of other recipes.
These condiments are normally used to fill a food or to condiment it while it is cooked. Since there are many recados some have been named after their colors although this recado is not white indeed it is the clearest of the recados. It is also known as pot recado because it is used in preparations where pots are used.
Is the perfect condiment to give a very spiced flavor to any stew or soup with beef , pork or chicken.
About the Recipe
In this preparation you are only going to roast and blend ingredients; anyone can make it.
To make this recado bitter orange is needed, if you don’t get it substitute it for 1 tablespoon of orange juice + 1 tablespoon of lime juice.
As part of the ingredients peppercorns are used, don’t substitute them for pepper powder because it has less flavor.
The preparation time is of 10 minutes and then the white recado is left drying for 30 minutes.
The recipe is for 1/2 cup.
Ingredients 1/2 Bitter Orange (3.5 oz)1 Garlic head (2.1 oz)
1 Cinnamon branch (.1 oz)
1 teaspoon of Coriander seeds
1 teaspoon of Cumin1 teaspoon of Oregano1 teaspoon of Black Peppercorns (.3 oz)1/2 tablespoon of Salt
Cookware 1 Frying Pan1 Blender1 Bowl1 Tongs1 Turner1 Orange Squeezer (optional)
Directions Roast some Ingredients
Put in a frying pan over medium heat:
- 6 Cloves.
1 Cinnamon branch.
- 1 teaspoon of Coriander seeds.
1 teaspoon of Cumin.
- 1 tablespoon of Black Peppercorns.
Roast the frying pan ingredients for about 2 minutes, until they are moderately roasted and they release a lot of smell; stir regularly.
||The spices are roasted to intensify their flavor.
- Transfer from the frying pan to a blender the spices that were roasted, then reserve.
Put in the frying pan over medium heat 1 garlic head and roast it for about 4 minutes, until all their sides are moderately roasted; stir regularly with some tongs.
Remove from the frying pan the garlic head and wait until it cools a little.
Separate the garlic cloves from the garlic head that was roasted, peel them and put them in the blender.
Mix the Ingredients
- Also add in the blender, along with the other ingredients:
- The juice of 1/2 Bitter Orange.
1 teaspoon of Oregano.
- 1/2 tablespoon of Salt.
Blend very well the ingredients.
Pour over a bowl the white recado and leave it drying for about 30 minutes, until it is moderately dried.

for any Dish
Recommendation: If this recado is refrigerated put it in an airtight jar so all their aromas preserve.
Variation: Let’s put some color to this preparation with the reddish recado , a recado that is full of flavor.
