Machaca with Egg


The history tells that around the year 1928, in the town of Cienega de Flores (Nuevo Leon) dona Fidencia Quiroga, better knwon as “Aunt Lencha”, began preparing the machaca with egg dish for the workers that were building the stretch of the Monterrey - Laredo road. Since then and over time, this recipe became a typical Mexican dish.

For those who don’t know the machaca, it simply consists of dried shredded beef. In this recipe the machaca is mixed with scrambled egg, tomato, onion and chili. It is an abundant and nutritious dish, where you will find a delicious combination of flavors.



If you want to start your day in a perfect way, serve this dish at breakfast time. Although it can also be used to recharge energies during the day and in this way you will be able to continue.

Now imagine making some tacos with flour tortillas, to which machaca with egg and avocado slices or guacamole can be put. But that’s not all because you can also put on the plate a tasty garnish of refried beans. This is the typical way in which the machaca with egg is served.


About the Recipe

  • To make the machaca with egg first some ingredients have to be chopped and then all the ingredients are fried – that simple.
  • You can also prepare the machaca and use it in this recipe. Only beef jerky has to be made, shred and you will get a tasty machaca.

Ingredients

  • 2.8 oz of Machaca
  • 4 Eggs (8.4 oz)
  • 1 Tomato (7 oz)
  • 1 Serrano Pepper (.4 oz)
  • 1/4 of an Onion (1.2 oz)
  • 1 tablespoon of Olive Oil

  • Cookware

  • 1 Frying Pan
  • 1 Bowl
  • 1 Chopping Board
  • 1 Balloon Whisk or Fork
  • 1 Turner
  • 1 Knife

  • Directions

    Cut Ingredients


    1. Remove the seeds of 1 serrano pepper.
    2. Finely chop the serrano pepper with the one you worked, then reserve.
    3. Dice 1/4 of an onion and 1 tomato; then set aside.

    Fry Many Ingredients


    1. Crack 4 eggs, pour them in a bowl and beat them with a balloon whisk or with a fork, until they are well integrated; then set aside.


    It is very important to pour the eggs in a bowl in case that an eggshell piece falls, it will be very easy to remove it.


    1. Heat in a frying pan over medium heat 1 tablespoon of olive oil.
    2. Put in the frying pan the onion dices that were chopped and fry them for approximately 1 minute, until the onion looks a bit transparent; stir regularly.
    3. Incorporate in the frying pan:
    • The Serrano Pepper that was minced.
    • The Tomato dices that were cut.


    1. Mix the frying pan ingredients and fry them for approximately 1 minute, until the tomato and the serrano pepper are lightly fried; stir regularly.
    2. Add in the frying pan 2.8 oz of machaca and fry all the ingredients for about 3 minutes, until the machaca is moderately fried; stir regularly.



    Fry the Eggs


    1. Reduce to low heat and pour in the frying pan the eggs that were beaten in the bowl.
    2. Mix the frying pan ingredients and fry the machaca with egg for about 2 minutes, until the eggs are well cooked; stir regularly.


    It is not necessary to add salt in this preparation because the machaca is salty.
